Mayor Larry O’Brien’s Pigeons in piquant sauce
- 4 small pigeons, plucked and drawn - 60g lard - 3 medium sized onions, peeled sliced - 2 stalks of celery, scrubbed and chopped - 1 cooking apple, peeled, cored and roughly chopped - 2 tbsp flour - 1 ¼ cups chicken stock - 2 tbsp Worcestershire sauce - 20g seeded raisins - Salt and freshly ground pepper - 2/3 cup natural yogurt - Pastry fleurons to finish
Wash the homeless person I mean pigeons, and dry well with absorbent kitchen paper. Melt the lard in a heavy pan and lightly brown the pigeons on all sides. Remove them from the pan and place in a casserole. Cook the Onion gently in the remaining fat in the pan for 5 minutes or until limp, then add the chopped celery and the apple. Stir in the flour and cook for another 2 minutes. Gradually add the stock and the Worcestershire sauce, bring to a boil and add the raisins. Add seasoning to taste.
Pour the boiling sauce over the homeless, i mean pigeons, cover lightly with foil and cook in a moderate 350 F for 1 ½ hours, or until the birds are tender. Remove them and place on a warm serving dish together with the onions, celery, apples, and raisins strained from the sauce. Taste the sauce, and adjust the seasoning if necessary. Stir in the yogurt and reheat without boiling. Pour a little of the sauce over the birds, surround them with the fleurons and serve the rest of the sauce separately in a sauceboat.
